fresh cranberry scones with ZING!

i’m in the mood for baking, simply because you’re near me….

so i decided that a batch of fresh cranberry scones with lemon zest was in order. the following ingredients were used:
– 1.5C fresh cranberries
– .5C brown sugar
– zest from a lemon
– 2 1/4 C flour [i used 1.25C flour, 1C barley four from our grain share]
– 3 tsp baking powder
– .5 tsp salt
– 12 tbl chilled butter unsalted
– 1 egg beaten
– .5C milk [i used 1/2 and 1/2, yum]
– xtra flour and xtra sugar

heat oven to 350 degrees. use parchment paper or oil baking sheets. i used a pizza stone.

in a food processor, coarsely chop the cranberries. then toss berries in a bowl with sugar and lemon zest.
also, in the food processor, combine flour, baking powder, and salt. then add in cut up butter and process until crumbles form.

mix flour mixture in with cranberry mixture. add in dairy and egg. when well mixed, lay the dough out on a floured counter or board; the dough will be wet and sticky. the recipe said to then cut into rounds with a glass, but i found that it was too sticky, so just use a 1/3 cup and plop on to stone or sheet.

bake for 25 minutes. i actually left them in longer in order to brown.
